Back at it again



I'm getting that itch to homebrew once again! My last run was a couple years creating a batch of Pale Ale! It turned out nice, but I would like to collect better equipment before I start another journey of brewing my own beer again!



So, I'm going to start with some simple fool-proof recipes, diving into one of the other cultures I love, Korea! Maesil Ju, which is Korean Plum Wine that uses Green Plums or unripe apricots, it's a sweet liqueur that has healthy benefits. Unfortunately, I did not document the process of acquiring and mixing in all of the ingredients for the Maesil Ju...! In addition, I was late on the season the Green Plums were sold at the korean markets and was stuck with ripe/yellow apricots...

Although, I'm hoping the sweetness of the yellow apricots would save my use of using brown sugar to the mixture from traditional recipe and it would come out with the same results. If not, lesson learned and I'll hopefully come out with some decent alcohol!

Recipe for my version of Maesil Ju
  • 10 lbs of Yellow Apricots, washed and with stems removed
  • 5 lbs Brown Sugar
  • 2 l.5 liters of Chum Churum Rich 20% Soju
  • 5 Gallon Bucket (Food Grade)

Should be ready in 3 months!!! But next time, I'll be making Makgeolli, Korean Rice Wine!
